Holiday Cranberry Stuffed Squash

Elegant holiday squash with maple-cranberry filling. Perfect for Thanksgiving!
Ingredients
3 winter squash (acorn, buttercup, butternut, or delicata)
2 cups minced onions
1 cup minced celery
1 teaspoon cooking liquid (broth, water, or apple juice)
3 cups fresh or 12 oz frozen cranberries
1/2 teaspoon salt
1 cup unsweetened applesauce
2 teaspoons freshly grated orange peel
Juice of 1 orange (about 1/2 cup)
1/2 cup pure maple syrup (or to taste)
Instructions
1. Preheat oven to 400°F.
2. Slice squash in half lengthwise, remove seeds.
3. Place cut-side down in baking pan with 1/2 inch water. Cover and bake 30 minutes.
4. Sauté onions and celery in cooking liquid 10 minutes until softened.
5. Add cranberries and salt. Simmer until cranberries pop (about 10 minutes).
6. Remove from heat. Stir in applesauce, orange peel, orange juice, and maple syrup.
7. Turn squash over. Fill each cavity with rounded 1/2 cup filling.
8. Bake uncovered 30 minutes until well done.
