Light Mediterranean-style potato salad with fat-free Italian dressing. Perfect for summer!
Ingredients
1 lb new red potatoes
1/4 cup water
1 small red onion, thinly sliced
Several ripe black olives, sliced (optional)
1 small cucumber, chopped
1 tomato, chopped
1/2 cup fat-free Italian dressing
2 tablespoons snipped fresh parsley
Instructions
1. Scrub potatoes and slice crosswise into 1/4-inch slices.
2. Place in microwave-safe casserole with water. Cover.
3. Microwave on high 9-10 minutes until tender, stirring once. Drain and cool.
4. Add onions, olives, cucumber, tomato, dressing, and parsley.
5. Mix lightly to coat evenly.
6. Refrigerate until chilled. Stir before serving.
