Italian Thanksgiving Lasagna

Traditional Italian-American holiday lasagna with colorful vegetable layers. A family tradition!

Ingredients

Marinara: 3 cans crushed tomatoes 5-6 cloves garlic, crushed Handful of parsley Basil 1 small onion Salt to taste Lasagna: 1 1/2 boxes lasagna noodles 3-4 lbs fat-free ricotta cheese 4 egg whites 2 cups steamed spinach leaves 2 cups boiled and mashed carrots 3 long zucchini, cut into strips and steamed Sun-dried tomatoes, chopped White and black pepper Garlic Chopped mushrooms

Instructions

Marinara: 1. Sauté onion and garlic in water. Add tomatoes and basil. Simmer 1 hour. 2. Add salt and parsley to taste. Lasagna: 3. Boil noodles. Lay flat on tablecloth to dry. 4. Mix ricotta with egg whites, peppers, and sun-dried tomatoes. 5. Divide into thirds: mix one third with spinach, one third with carrots (add extra pepper). 6. Layer in pan: marinara, noodles, plain cheese, noodles, zucchini, noodles, spinach cheese, noodles, carrot cheese, noodles, sauce. 7. Bake at 350°F for 45 minutes. 8. Let rest before slicing.
