A protein-rich salad combining lentils and beans with fresh vegetables. Ideal for meal prep and lunch boxes.
Ingredients
1 can (15 oz) lentils, rinsed and drained
1 can (15 oz) kidney beans, rinsed and drained
1 cup cherry tomatoes, quartered
1/2 cucumber, diced
1/4 cup red onion, finely diced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh mint, chopped
3 tablespoons lemon juice
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions
1. Combine lentils, beans, tomatoes, cucumber, onion, parsley, and mint in a large bowl.
2. Whisk together lemon juice, balsamic vinegar, mustard, salt, and pepper.
3. Pour dressing over salad and toss to coat.
4. Refrigerate for at least 30 minutes.
5. Will keep refrigerated up to 5 days - great for meal prep.
