Hearty risotto with brown rice, lentils, leeks, and red pepper. A complete protein meal!
Ingredients
4 leeks (green and white parts), chopped and well washed
4 cloves garlic, minced
1 red pepper, finely chopped
3 cups vegetable broth or water
1 1/4 cups brown rice
Salt and pepper to taste
1 tablespoon chopped fresh basil (or pinch dried)
1 cup cooked lentils
1/4 cup freshly chopped parsley
1/4 cup finely grated carrots
Instructions
1. In a 4-quart deep pot, sauté leeks, garlic, and red pepper in a small amount of broth until soft.
2. Add remaining broth and stir in rice along with seasonings.
3. Reduce heat and simmer covered for about 40 minutes or until rice is done.
4. Uncover, stir in cooked lentils and reheat until hot.
5. Garnish with parsley and grated carrot before serving.
