Marinated Cucumber Noodle Salad

Refreshing Asian-style salad with cellophane noodles. Even better the next day!
Ingredients
2 oz dry cellophane or bean thread noodles
2 cups peeled, seeded, and sliced cucumbers
2 cups thinly sliced red bell peppers
3/4-1 cup no-oil Italian dressing or vinaigrette
1 tablespoon freshly minced basil
1 tablespoon freshly minced cilantro
1/8 teaspoon red hot chili flakes
Lettuce for serving
Instructions
1. Drop noodles into boiling water until done (check label for time). Drain.
2. Break noodles slightly if needed for mixing.
3. Toss all ingredients together.
4. Marinate for at least 1 hour.
5. Serve on a bed of lettuce.
Note: Travels well - not too soupy. Even better the next day!
