A tabbouleh-style salad with lentils and fresh herbs including mint.
Ingredients
1-2 cups cooked lentils
1-2 cups bulgur, cooked by soaking in boiling liquid
1 or more tomatoes, chopped
1 bell pepper, diced
2 or more cloves garlic, minced
1 red onion, chopped
1 bunch fresh mint, chopped
1 bunch fresh parsley, chopped
1 bunch fresh dill, chopped
Fresh lemon juice (from 1-2 lemons)
Instructions
1. Cook lentils until tender. Set aside.
2. Pour boiling water over bulgur and soak until tender.
3. Combine lentils and bulgur in large bowl.
4. Add tomatoes, bell pepper, garlic, and red onion.
5. Fold in fresh mint, parsley, and dill.
6. Dress with fresh lemon juice.
7. Toss to combine and serve.
