A light and refreshing salad with cannellini beans, sun-dried tomatoes, and Mediterranean herbs.
Ingredients
2 cans (15 oz each) cannellini beans, rinsed and drained
1/2 cup sun-dried tomatoes (dry-packed), chopped
1/4 cup kalamata olives, pitted and halved
1/4 cup red onion, finely diced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh oregano, chopped (or 1 tsp dried)
2 tablespoons lemon juice
1 tablespoon red wine vinegar
1 clove garlic, minced
Salt and pepper to taste
Instructions
1. If sun-dried tomatoes are very dry, soak in warm water 10 minutes and drain.
2. Combine beans, tomatoes, olives, onion, parsley, and oregano in a bowl.
3. Whisk together lemon juice, vinegar, and garlic.
4. Pour dressing over salad and toss gently.
5. Season with salt and pepper.
6. Serve immediately or refrigerate up to 3 days.
