Quick savory stuffing with couscous, dried fruit, and nutritional yeast. Tastes surprisingly chickeny!
Ingredients
2 cups cooked rice (can be leftover, refrigerated)
Handful of dried currants
Handful of dried sweetened cranberries
2 cups couscous
2 stalks German celery (or regular celery)
3 tablespoons nutritional yeast
Salt to taste
Instructions
1. Boil water.
2. Add couscous, chopped celery stalks, and dried fruit.
3. Cook 4 minutes or until couscous is tender. Drain.
4. Blend the steaming hot couscous with the cold cooked rice.
5. Add nutritional yeast and stir.
6. Salt to taste. Serve immediately.
Simpler Version: Cook couscous with celery for 4 minutes. Drain. Stir in nutritional yeast and salt to taste.
