Mom's Herb Stuffing

Richly flavored stuffing with apples, potatoes, and warming spices. A family treasure!

Ingredients

2 onions, chopped 2-4 cloves garlic 8-10 stalks celery, sliced on diagonal 2 potatoes (skin on) 2 Granny Smith apples, seeded and chopped 1 lb fresh mushrooms 4 sprigs fresh parsley, chopped 3 teaspoons poultry seasoning 1/2 teaspoon each: nutmeg, curry powder, ginger 1 large bag unseasoned bread crumbs or cubes Veggie broth or water for sautéing

Instructions

1. Sauté onions, garlic, celery, potatoes, apples, mushrooms, and parsley in broth until barely wilted. 2. Add poultry seasoning, nutmeg, curry powder, and ginger. 3. Finish cooking (but remember they'll cook more, so don't overdo it). 4. Add bread crumbs or cubes. Stir well. 5. Bake in covered casserole for 20-30 minutes, or reheat in microwave. Variation: Add raisins for a sweeter version!
