A heart-healthy angel food cake from Dean Ornish's Eat More, Weigh Less program. Virtually fat and cholesterol free.
Ingredients
1 cup cake flour
1 1/2 cups sugar
2 cups egg whites (6-8 eggs)
1 teaspoon pure vanilla extract
1/4 teaspoon almond extract
1/4 teaspoon salt
Instructions
1. Preheat oven to 350°F.
2. Sift flour and 3/4 cup sugar together 3 times. Set aside.
3. Beat egg whites until foamy with whisk attachment of electric mixer.
4. Gradually beat in remaining sugar. Add extracts and salt.
5. Beat just until stiff peaks form. Do not overbeat.
6. Remove bowl from mixer.
7. With a whisk or spatula, fold in flour mixture by thirds.
8. Place batter in ungreased 10-inch tube pan.
9. Bake 40-45 minutes until golden brown and springs back to touch.
10. Invert cake until cool, then remove from pan.
