A creamy, low-fat Peach Bread Pudding recipe.
Ingredients
The following is an adaptation of a recipe in Dr. Ornish's Program for
Reversing Heart Disease.
Peach Bread Pudding
6 medium peaches
2 cups vanilla soy milk
1/2 tsp salt
1 pound loaf of stale sourdough or whole wheat bread
1 tsp Amaretto
1/4 tsp nutmeg
1/2 cup apple juice concentrate
juice of 1/2 lemon
6 egg whites, beaten
Blanch, peel, and pit the peaches, then cut them into pieces. Set
aside.
In large bowl, mix salt and soymilk. Tear bread into 1-inch cubes and
immerse them into milk mixture. Let soak for 15 minutes.
When soaking the above, get another bowl and mix Amaretto, nutmeg, apple
juice concentrate, lemon juice, and peaches. Add beaten egg whites.
Then add this to the bread mixture and toss gently.

Pour into 8- or 9-inch no-stick square pan. Bake in preheated oven at
350 F for 45 minutes, or until set and brown. Serve warm.
