Penne with Artichoke Hearts

Italian-style pasta with artichokes, white wine, and lemon. Light yet satisfying.
Ingredients
1 package (9 oz) frozen artichoke hearts
10 oz penne or rigatoni
1 small onion, thinly sliced
1 clove garlic, finely chopped
1 1/2 teaspoons fresh oregano (or 1/2 teaspoon dried)
Salt and fresh ground pepper to taste
1/4 cup dry white wine
2 tablespoons fresh lemon juice
1/2 cup skim-milk ricotta cheese
1 tablespoon grated lemon zest
Instructions
1. Blanch artichokes in salted water for 1 minute and drain (or thaw overnight).
2. Slice 2/3 of artichokes into wedges; finely chop remaining 1/3 into paste.
3. Cook pasta in boiling salted water until al dente.
4. Sauté onion and garlic in 1/4 cup water until limp.
5. Add oregano, salt, and pepper. Reduce heat.
6. Stir in wine, lemon juice, and all artichokes.
7. Simmer 1 minute until heated through.
8. Stir in ricotta until creamy.
9. Before draining pasta, reserve 1/2 cup cooking water and add to sauce.
10. Toss pasta with sauce, stir in lemon zest.
11. Adjust seasonings and serve immediately.
