A flavorful, low-fat sauce recipe.
Ingredients
I found a good-tasting fatfree pesto recipe in *The New McDougall
Cookbook* on page 190. It is actually for a pasta salad (which was
very good,) butthe pesto could be used for other dishes too.
Pesto
1 pound fresh spinach
1 cup fresh basil leaves
3-4 cloves garlic
1/2 cup low-fat soy milk
1/2 cup oil-free Italian dressing
3 tablespoons onion powder
2 tablespoons soy sauce
Trim and wash the spinach. Cook,covered, 2-3 minutes until

blender and process until smooth.
I used this cold for a pasta salad dressing, but next time I'll heat
it and try it hot. My family, by the way, said that it tasted great,
but looked like pond scum! I told them to eat with their eyes closed
:).
