Pinto Bean Burgers (Ornish Style)

Heart-healthy bean burgers from Dr. Dean Ornish's program. Only 10% calories from fat!
Ingredients
1/2 cup minced green onions
1 1/2 tablespoons minced garlic
2 tablespoons white wine or vegetable stock
1 (29 oz) can pinto beans, drained
3/4 cup cracker meal or oat bran
2 egg whites or vegan substitute
1/2 cup chopped fresh parsley
2 tablespoons seasoned rice vinegar
1/2 teaspoon Italian seasoning
Instructions
1. Preheat oven to 350°F.
2. In nonstick pan, braise onions and garlic in wine until soft.
3. Combine sautéed vegetables, beans, cracker meal, egg whites, parsley, vinegar, and seasoning.
4. Mash well with fork until blended but not entirely smooth.
5. Drop by 1/2-cup amounts onto parchment-lined baking sheet.
6. Flatten gently to form 6 5-inch burgers.
7. Bake 25 minutes until set and lightly browned.
8. Serve with salsa and nonfat yogurt.
