Quick and easy Asian-style stir-fry. Perfect for non-tomato lovers!
Ingredients
2 medium zucchini, halved and sliced
1 bell pepper (red or green), sliced
1 large onion, sliced
1/3-1/2 pound mushrooms
1/4 pound mung bean sprouts
3 cloves garlic, sliced
1-2 teaspoons fresh grated ginger
1 cup veggie broth
Soy sauce to taste
2 teaspoons cornstarch dissolved in 1/4 cup water
1/4 cup dry sherry
Instructions
1. Put sherry and all vegetables except sprouts into a nonstick skillet.
2. Sauté until vegetables just begin to get tender.
3. Add broth and bring to simmer.
4. Thicken with cornstarch dissolved in water.
5. Season with soy sauce to taste.
6. Add bean sprouts and toss.
7. Serve over rice, baked potatoes, or soba noodles.
