A quick and easy meatless chili using TVP that even dedicated meat-eaters can't tell the difference. Perfect over rice.
Ingredients
1 cup Beef Not! Chunks (TVP)
Broth or tomato juice for reconstituting
1 onion, chopped
1 can (14 oz) diced tomatoes with juice
1 can (15 oz) corn, drained
1 can (15 oz) chili-spiced black beans
Instructions
1. Reconstitute TVP chunks in broth or tomato juice with chopped onions.
2. Heat as directed on package.
3. Add tomatoes with juice, cut up.
4. Add drained corn and chili beans.
5. Bring to a boil, then simmer slowly for an hour or longer.
6. Add liquid as needed during cooking.
7. For best results, refrigerate overnight and serve the next day.
8. Serve over rice.
