Easy microwave lasagna with eggplant and zucchini. Uses microwave-ready noodles!
Ingredients
1 pkg microwaveable lasagna noodles
1 jar Ragu sauce
1-2 eggplant, sliced in thin circles
1-2 zucchini, sliced in thin circles
1 container fat-free cottage cheese
Instructions
1. Layer eggplant/zucchini slices on microwavable plate. Cover with plastic wrap. Microwave a few minutes until softened.
2. Pour a layer of sauce in square microwave baking dish.
3. Layer: noodles, sauce, eggplant/zucchini, cottage cheese, sauce.
4. Repeat until ingredients are used.
5. End with noodles and top with sauce.
6. Microwave according to package directions.
