A bold, garlicky gazpacho with plenty of fresh vegetables and a kick from jalapeños. Features 20-25 cloves of garlic!
Ingredients
1 cup chopped green peppers
1 cup diced fresh tomatoes
1 cup chopped onions (Walla Walla if possible)
20-25 cloves garlic (hardneck if possible)
2 large jalapeño chiles, diced without seeds
1 large can V8 or tomato juice
4 tablespoons fat-free sour cream
Mexican herbs to taste (cilantro, chili powder, cumin, crushed red pepper)
Instructions
1. Cool tomato juice or V8 in the freezer until very cold.
2. Combine all chopped vegetables in a large bowl.
3. Pour cold tomato juice over vegetables.
4. Add Mexican herbs and spices to taste.
5. Refrigerate until well chilled.
6. Serve cold topped with fat-free sour cream.
