Rice and Beans Microwave Lunch

Protein-packed rice and beans with mushrooms. Prep the night before!

Ingredients

1 cup cooked brown basmati rice (cooked in vegetable broth) 1/2 can spiced Italian tomatoes 1/2 bunch parsley, chopped 1/2 can small brown beans, seasoned 6-12 fresh or canned oyster mushrooms

Instructions

1. In the morning (or night before), combine all ingredients in plastic container. 2. Mix well. 3. At work, microwave for 3 minutes on high. 4. Enjoy!
