Tuscan-style risotto with spinach, cannellini beans, and saffron. Hearty and nutritious!
Ingredients
Nonfat cooking spray
1 medium onion, chopped (1/2 cup)
1 clove garlic, crushed
1 cup uncooked arborio rice
3 cups vegetable broth
1/2 teaspoon saffron threads (or 1/4 teaspoon turmeric)
1 can cannellini beans (15-16 oz), rinsed and drained
1 (10 oz) package frozen chopped spinach, thawed and squeezed dry
1/4 cup grated fat-free Parmesan cheese (optional)
Instructions
1. Spray 10-inch skillet with cooking spray.
2. Cook garlic and onion over medium-high heat about 2 minutes until onion is crisp-tender.
3. Add rice and stir to coat with onion-garlic mixture.
4. Stir in broth and saffron.
5. Heat to boiling; stir once thoroughly and reduce heat.
6. Cover and simmer 20-25 minutes until rice is almost tender and liquid is absorbed.
7. Stir in beans, spinach, and cheese.
8. Cover and let stand 5 minutes before serving.
