Amazing vegan stuffing with plant-based sausage, mushrooms, and apples. Freezes beautifully!
Ingredients
12 cups bread cubes
1 tube Gimme Lean sausage flavor (or Morningstar Farms crumbles)
1/4 cup veggie broth
2 onions, chopped
4 stalks celery, chopped
2 cups mushrooms, sliced
2 teaspoons each: sage, marjoram, thyme
1 teaspoon salt
1/2 teaspoon pepper
2 2/3 cups water
2 tablespoons vegetarian chicken-style broth powder
1 cup water chestnuts
1 apple, cut into small cubes
Instructions
1. Sauté onions, celery, and mushrooms in veggie broth until transparent.
2. During last few minutes, add sage, marjoram, thyme, salt, and pepper.
3. Heat 2 2/3 cups water and add broth powder.
4. Combine all ingredients (bread cubes, sautéed veggies, broth, water chestnuts, apple, and crumbled sausage). Toss well.
5. Put in baking pan and bake at 350°F for 30 minutes.
To freeze: Put in Ziploc bags before baking. When ready to cook, thaw, add a little more broth, and bake as directed.
