Boldly flavored stuffing with lots of garlic, sage, and soy sauce. Adjust herbs for milder taste!
Ingredients
2 tablespoons vegetable broth
1 large onion, chopped fine
1 1/3 cups celery, diced (about 4 stalks)
2 cups mushrooms, finely chopped
6 cloves garlic, minced
1/4 cup sage (or 1/8 cup for milder flavor)
2 teaspoons each: oregano, thyme
1 teaspoon rosemary
2 teaspoons celery seed
Salt and pepper to taste
1/4 cup soy sauce or tamari
1/4-1/2 cup water
4 cups cornbread, cubed
2 cups whole wheat bread, cubed
Instructions
1. Sauté onions, garlic, and celery in veggie broth until onions are soft.
2. Add mushrooms, soy sauce, water, and all herbs. Sauté 5 more minutes.
3. Add cornbread and whole wheat bread cubes. Mix well.
4. Add more water if mixture seems dry.
5. Spray casserole with cooking spray. Mound in stuffing.
6. Cover with foil and bake at 350-375°F for about 30 minutes.
Note: For milder flavor, cut herbs and garlic in half.
