Pre-baked spaghetti squash with Italian tomatoes. A satisfying low-carb lunch!
Ingredients
1/2 spaghetti squash
1 can diced Italian tomatoes
1/2 inch water for baking
Instructions
1. At home: Bake squash in a tray with 1/2 inch of water at 350°F until soft and stringy.
2. Scoop squash contents into plastic lunch box.
3. Dump can of Italian tomatoes on top. DO NOT MIX!
4. At work: Mix and microwave for 3 minutes on high.
