A Southern-inspired salad with black-eyed peas and a kick of jalapeño. Perfect for New Year's celebrations.
Ingredients
2 cans (15 oz each) black-eyed peas, rinsed and drained
1/2 cup red bell pepper, diced
1/2 cup yellow bell pepper, diced
1/4 cup green onions, sliced
1 jalapeño, seeded and minced
1/4 cup fresh cilantro, chopped
3 tablespoons apple cider vinegar
1 tablespoon lime juice
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
Salt to taste
Instructions
1. Combine black-eyed peas, bell peppers, green onions, jalapeño, and cilantro in a bowl.
2. Whisk together vinegar, lime juice, cumin, cayenne, and salt.
3. Pour dressing over salad and toss gently.
4. Cover and refrigerate at least 1 hour for flavors to blend.
5. Adjust heat level with more jalapeño or cayenne if desired.
