Simple wheat-free pasta with spinach and fresh herbs. Surprisingly satisfying!
Ingredients
6 oz corn spaghetti, cooked
2-4 tablespoons minced parsley
2-3 tablespoons minced fresh chives
1 package frozen leaf spinach
Salt to taste (spinach needs more salt)
Instructions
1. Cook corn pasta at home.
2. Layer pasta, parsley, chives, and frozen spinach into lunch container.
3. At work, microwave for 5 minutes.
4. Mix well. If spinach isn't cooked enough, microwave 1-2 more minutes.
