Vera's famous Thanksgiving dressing with spinach and mushrooms. A holiday tradition!
Ingredients
1/2 loaf stale French bread, cut in small cubes
1 onion, chopped fine
3-4 stalks celery, chopped
1 package frozen chopped spinach, thawed
1 lb mushrooms, sliced
1/4 cup parsley, chopped
2 egg whites (or egg replacer)
Salt and pepper to taste
Instructions
1. Sauté onions until browned.
2. Add celery and mushrooms and cook until soft, about 15 minutes.
3. Mix cooked vegetables with bread cubes and remaining ingredients.
4. Transfer to casserole dish.
5. Bake at 375°F for one hour.
