A naturally sweetened apple cobbler that's vegan and guilt-free.
Ingredients
1 1/2 cups white flour
2 teaspoons baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup applesauce
1/2 cup low-fat rice or soy milk
1/2 cup apple juice
4 cups sliced apples (about 3-4 apples)
Cinnamon for topping
Vanilla soy yogurt for serving
Instructions
1. Preheat oven to 350°F.
2. Mix flour, baking soda, cinnamon, and salt.
3. Add applesauce, milk, and apple juice. Mix well.
4. Pat into oiled 13x9x2 inch pan.
5. Arrange apple slices on top of crust.
6. Sprinkle with additional cinnamon.
7. Bake 45 minutes or until crust is brown and fruit is tender.
8. Serve warm or cool with vanilla soy yogurt.
