Summer Basil Pasta Salad

A fresh summer salad with pasta, colorful vegetables, and lots of fresh basil.

Ingredients

16 oz dry fusilli pasta Dressing: 1/2 cup sweet rice vinegar 3 teaspoons sugar 2 teaspoons Dijon mustard 1 1/2 teaspoons salt (optional) 2 cloves garlic, minced Pepper to taste Salad: 1/2 cup chopped green onions 1/2 cup chopped bell peppers (any color) 1/2 cup lightly steamed green beans 1/2 cup chopped carrots 1/2 cup chopped zucchini 3/4 cup golden raisins 1/2 cup fresh basil, chopped 1/2 cup fresh parsley, chopped

Instructions

1. Cook pasta according to package directions. Drain and cool. 2. Whisk together all dressing ingredients. 3. Combine all salad vegetables, raisins, and herbs in large bowl. 4. Add cooled pasta and toss. 5. Pour dressing over salad and mix well. 6. Chill before serving.
