Sunbeam Tapioca Pudding

A creamy, low-fat Sunbeam Tapioca Pudding recipe.

Ingredients

Cooking time: 5 minutes
3 Tablespoons instant tapioca
1 cup pineapple juice
1 cup orange juice
1 1/2 Tablespoons lemon juice
1/2 cup canned mandarin orange sections, drained
1 cup canned pineapple, crushed or tidbits, drained

Instructions

Combine the instant tapioca, pineapple juice, and orange juice in a
saucepan.
Cook and stir over medium heat until the mixture comes to a boil. Remove
from
heat; add the lemon juice. Cool, stirring occasionally. Add the fruit and
chill until firm.
