Swiss Mushroom Risotto

Rich risotto with exotic dried mushrooms, Merlot wine, and Parmesan. A Swiss-Italian classic!

Ingredients

7 oz brown rice 1 onion, chopped fine 1 clove garlic, chopped fine 1 teaspoon rosemary 1/3 oz dried mushrooms (exotic variety), soaked 7/8 cup vegetable broth 7/8 cup Merlot or other red wine 2 oz grated fat-free Parmesan (or Sapsago cheese) Salt and pepper to taste

Instructions

1. Cook rice for 15 minutes in 1 3/4 cups water. 2. Squeeze out mushrooms and chop them. 3. Sauté onion and garlic in your favorite liquid. Add rosemary and mushrooms, boil rapidly. 4. Add rice and bring to a boil. 5. Add broth and wine. Cook for 10 minutes over low flame. 6. If too much liquid, cook uncovered until reduced. 7. Season with salt and pepper. Add Parmesan and serve promptly.
