A bold, flavorful salad with pinto beans, roasted peppers, and southwest seasonings. Great for potlucks.
Ingredients
2 cans (15 oz each) pinto beans, rinsed and drained
1 can (4 oz) diced green chiles
1/2 cup roasted red peppers, diced
1/2 cup sweet onion, finely diced
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
1 tablespoon red wine vinegar
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
Salt to taste
Instructions
1. Combine pinto beans, green chiles, roasted peppers, onion, and cilantro in a large bowl.
2. In a small bowl, whisk together lime juice, vinegar, cumin, paprika, garlic powder, and salt.
3. Pour dressing over bean mixture and toss to combine.
4. Refrigerate at least 30 minutes for flavors to develop.
5. Serve cold or at room temperature.
