Tomato and Basil Pesto
1 medium vine-ripened tomato
1/2 cup loosely packed basil leaves
2 tablespoons chopped Italian parsley
1/2 teaspoon minced garlic
1 tablespoon balsamic vinegar
1 teaspoon lemon juice
salt
freshly ground black pepper
Core the tomato and cut in half. Grill over very hot coals for only a few
minutes to take on some color and flavor. Remove from the grill and set aside
to cool.
