Simple vegan cookies with just a few wholesome ingredients. The banana provides all the sweetness you need.
Ingredients
2 cups pureed bananas
1-2 tablespoons maple syrup
1 teaspoon vanilla extract
1/2 cup whole wheat flour
2 cups rolled oats
1 tablespoon ground cinnamon
1 teaspoon baking soda
1/2 cup raisins
Instructions
1. Preheat oven to 425°F.
2. In a large bowl, beat together bananas, maple syrup, and vanilla.
3. In another bowl, mix flour, oats, cinnamon, and baking soda.
4. Add dry ingredients to banana mixture, stirring until just blended.
5. Fold in raisins.
6. Drop batter by heaping tablespoonfuls onto nonstick baking sheet.
7. Shape into large cookies with a fork.
8. Bake 10-12 minutes until medium brown.
9. Makes 12 cookies.
