Vegan Broccoli Casserole

A creamy broccoli casserole with nutritional yeast cheese sauce and brown rice.

Ingredients

1 medium potato, peeled and diced 1/2 medium carrot, sliced 1/2 medium onion, diced 1 cup water 1 teaspoon salt 16 oz frozen chopped broccoli 4 oz firm tofu, crumbled 1/2 cup nutritional yeast flakes 1 tablespoon lemon juice Pinch garlic granules 1 cup uncooked instant brown rice 10 oz can sliced mushrooms, drained 3/4 cup water

Instructions

1. Preheat oven to 350°F. 2. In saucepan, bring potato, carrot, onion, 1 cup water, and salt to boil. 3. Cover and simmer until vegetables are tender, about 10 minutes. 4. Meanwhile, thaw broccoli under hot water and drain well. 5. Blend cooked vegetables with tofu, nutritional yeast, lemon juice, and garlic until smooth. 6. Pour sauce into greased 2-quart casserole. 7. Add broccoli, rice, mushrooms, and 3/4 cup water. 8. Stir well and smooth top. 9. Bake 40 minutes until golden and bubbling.
