Mixed berry soup with peaches and warming spices. Beautiful and delicious!
Ingredients
1 pint blueberries
1 pint strawberries, hulled and coarsely chopped
1 cup raspberries
2 medium peaches, chopped
4 cups raspberry or cranberry juice
1/3 cup dry red wine
Juice of half a lemon
1 teaspoon cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon nutmeg
Brown sugar to taste
Sliced strawberries for garnish
Instructions
1. Combine all ingredients except brown sugar and sliced strawberries in large soup pot.
2. Bring mixture to a low boil, lower heat, and simmer 10-15 minutes.
3. Check that fruit is tender. Add brown sugar to taste if desired.
4. Remove from heat and cool.
5. Refrigerate until chilled.
6. Garnish each serving with sliced strawberries.
