An unusual but delicious cookie using white beans as a base. High in protein and fiber!
Ingredients
1/2 cup dried great northern beans (yields about 1 cup cooked and mashed)
1/2 cup white sugar
1/2 cup brown sugar
1 teaspoon vanilla
1/2 teaspoon salt (optional)
4 cups rolled oats, ground to flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 pound dried apricots, chopped into fourths
Instructions
1. Cook beans until very soft. Drain and mash well.
2. Preheat oven to 375°F.
3. Cream mashed beans with sugars, vanilla, and salt.
4. Grind oats in food processor until flour-like with some grit.
5. Mix oat flour with baking powder and baking soda.
6. Add dry ingredients to bean mixture.
7. Fold in chopped apricots.
8. Form into 12 large balls (or 24 smaller ones).
9. Bake large cookies 15 minutes, smaller ones 10 minutes.
