High-fiber muffins with All Bran cereal and banana. Adapted from the Kellogg's box recipe!
Ingredients
1 1/4 cups wheat flour (white or whole wheat)
1/3 cup sugar
1/2 teaspoon salt
1 tablespoon baking powder
2 cups All Bran with Extra Fiber cereal
1 1/4 cups milk
2 egg whites (or egg substitute)
1/2 cup mashed banana
Instructions
1. Stir together dry ingredients (except cereal). Set aside.
2. In large mixing bowl, combine cereal with milk. Let stand 5 minutes until cereal softens.
3. Add egg whites and mashed banana. Mix well.
4. Add flour mixture, stirring only until moistened.
5. Spoon into 12 muffin cups sprayed with cooking spray.
6. Bake at 400°F for about 20 minutes or until golden brown.
