No-knead version of classic Anadama bread with raisins. Beat instead of knead for easier prep!
Ingredients
1 cup skim milk or low fat soymilk
1 cup water
1 cup cornmeal
3 tablespoons applesauce
1/2 cup molasses
2 tablespoons dry yeast
1/2 cup warm water
1/2 teaspoon sugar or honey
2 teaspoons salt
5 1/2 cups flour (approximately)
1 cup raisins
Instructions
1. Bring milk and 1 cup water to boil. Remove from heat, whisk in cornmeal.
2. Stir in applesauce and molasses. Cool to lukewarm.
3. Dissolve yeast in 1/2 cup warm water with sweetener until bubbly.
4. Add yeast mixture, salt, and half the flour. Beat 5 minutes with electric mixer (no kneading needed!).
5. Stir in raisins, gradually add remaining flour until sponge pulls from bowl sides.
6. Cover and let rise until doubled. Stir down.
7. Divide into two nonstick loaf pans. Cover and let rise to pan tops.
8. Bake at 350°F for 40-45 minutes. Remove from pans and bake 5 minutes on rack to crisp crust.
