Soft scones with bananas and oats. Quick and easy with many delicious variations!
Ingredients
2 cups flour
2 cups oatmeal (1 cup processed to flour-like consistency)
1/4 cup sugar
1 1/4 teaspoons baking powder
1/4 teaspoon salt
2 very ripe bananas
1 cup (about) nonfat milk
Instructions
1. Preheat oven to 375°F.
2. Process 1 cup oatmeal in food processor until flour-like.
3. Add flour, salt, baking powder, sugar and process to mix.
4. Process in mashed bananas.
5. Put in mixing bowl, mix in remaining oatmeal and milk until soft dough forms.
6. Knead lightly on floured surface.
7. Divide into 3 portions, flatten to 1/2-3/4 inch thick, cut into 4 wedges each.
8. Place on cookie sheet.
9. Bake 28 minutes.
Variations: Add raisins, dried cherries, or dates. Add cinnamon. Substitute applesauce for banana. Use pumpkin with nutmeg, cloves, cinnamon.
