Oil-free cornbread with fresh apple and cinnamon. The most delicious cornbread ever!
Ingredients
1 red delicious apple, peeled and sliced thin
1 1/2 cups unbleached white flour
1 1/2 cups blue corn meal
4 1/2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons sucanat or sugar
2 1/4 cups vanilla rice milk or low-fat soy milk
1 teaspoon cinnamon
1/4 cup applesauce
Instructions
1. Preheat oven to 400°F. If using a 10-inch iron skillet, rub with oil and heat in oven.
2. Peel apple and cut into very thin pieces.
3. Combine all dry ingredients, then add wet ingredients. Do not overmix.
4. Fold in apple pieces.
5. Pour into heated skillet or oiled casserole pan.
6. Bake 35 minutes on top shelf until knife comes out clean.
7. Let rest 10-20 minutes to firm up if desired.
Note: Try 2 apples for stronger apple flavor. Add maple syrup if you prefer sweeter bread.
