Fat-Free Blue Cornbread

Beautiful blue cornbread with fruit puree instead of oil. Fun in segmented cast iron pans!
Ingredients
1 cup blue cornmeal
1/2 cup flour (whole wheat or any kind)
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon Smucker's Baking Healthy or fruit puree
3/4 cup nonfat milk
2 oz egg substitute
Instructions
1. Preheat oven to 425°F.
2. Spray pan with cooking spray and put in oven to preheat.
3. Mix all ingredients.
4. Pour into pan.
5. Bake about 15 minutes for segmented pan, 20 minutes for loaf pan.
6. Test for doneness with toothpick - should come out clean.
Note: Segmented cast iron pans (corn cob shapes or pie wedges) make this extra fun!
