Simple banana bread that's great for athletes - provides instant glycemic boost!
Ingredients
About 5 ripe/overripe bananas
1/4 cup sugar (less if bananas are very ripe)
1 teaspoon vanilla essence
2 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
Handfuls of dried fruit (optional)
Brown sugar for sprinkling (optional)
Instructions
1. Blend bananas, sugar, and vanilla together until smooth.
2. In another bowl, mix flour, baking powder, baking soda, and dried fruit.
3. Add wet to dry ingredients and stir until damp throughout.
4. Dump into cake tin.
5. Sprinkle lightly with brown sugar if desired.
6. Bake at gas mark 5 (375°F) for about 1 hour.
7. Let cool 10 minutes, then gently lever out with a strong knife.
Note: Great if you do sports - provides high glycemic boost!
