Aloo Palak (Spinach Potato Curry)

Classic Indian curry with potatoes and spinach in a fragrant spice blend.

Ingredients

1 1/2 lb (700g) potatoes 1 lb (450g) fresh spinach (or frozen, thawed) 1 medium onion 1 teaspoon grated fresh ginger 2 garlic cloves 1/2 teaspoon turmeric 2 teaspoons cumin seeds 1 teaspoon red chili powder 2 medium tomatoes, chopped

Instructions

1. Boil potatoes in skins until almost done. Cool and cut into small cubes. 2. If using fresh spinach, remove stalks and cook gently 10 minutes in water clinging to leaves. Cool and chop. 3. Brown onion in vegetable stock or water until golden, about 10 minutes. 4. Add ginger and garlic, stir briefly. 5. Add spices with a little water. Cook 2-3 minutes until color deepens. 6. Add tomatoes and cook gently 3-5 minutes. 7. Add potatoes and spinach, mix well. 8. Cover and simmer gently until potatoes are done to your liking. 9. Serve with rice or naan.
