Beet Curry with Yellow Lentils

A colorful curry combining earthy beets with yellow lentils. Serve over basmati rice.
Ingredients
2 cups yellow lentils
8 cups water
1 tablespoon turmeric
4 large beets, diced
1 large onion, diced
5+ cloves garlic, pressed
2 tablespoons black mustard seeds
2 tablespoons cumin
1 tablespoon coriander
5-10 dried red chilies, crushed
Salt to taste
Instructions
1. Bring lentils, water, and turmeric to boil in large pot.
2. Reduce to simmer, stirring occasionally.
3. Spray frying pan lightly. Pop mustard seeds over medium-high heat.
4. Add garlic and onions, sauté briefly.
5. Add beets, reduce heat to medium-low.
6. Cook 10 minutes, stirring occasionally.
7. Add contents of frying pan to lentil pot.
8. Add cumin, coriander, chilies, and salt.
9. Simmer until lentils start to disintegrate.
10. Serve over basmati rice.
