Unique enchiladas combining sweet potatoes with spiced black beans. Serve with salsa verde!
Ingredients
8 corn tortillas
Filling:
2 medium sweet potatoes, cooked and diced
1 can black beans or equivalent
1 yellow onion, diced
1-10 jalapeños, seeded and diced (to taste)
1 tablespoon minced garlic
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon chili powder
Salsa verde for serving
Instructions
1. Cook sweet potatoes (microwave 5 minutes) and dice.
2. Water sauté onions until soft.
3. Add garlic and cook until softened.
4. Add remaining filling ingredients.
5. Cook down until thick consistency.
6. Heat tortillas on dry griddle or microwave to soften.
7. Spoon filling onto tortilla in off-center strip.
8. Roll up, sealing edge with a bit of filling.
9. Place seam-side down in sprayed baking dish.
10. Serve with salsa verde.
