Black Bean and Bell Pepper Burritos

Quick and colorful burritos with black beans and rainbow bell peppers.

Ingredients

1 can black beans, drained (reserve 1/4 cup liquid) 3 bell peppers (different colors), chopped 1 teaspoon dried garlic or minced fresh garlic cloves Salsa to taste Tortillas for serving

Instructions

1. Combine beans, peppers, garlic, and salsa. 2. Add reserved bean liquid if you like saucy burritos. 3. Spoon mixture into tortillas. 4. Microwave 30 seconds to 1 minute to heat. Optional: Roast peppers first for richer flavor (char under broiler, peel off skin).
