Virtually fat-free fried rice using egg substitute. All the flavor, none of the guilt!
Ingredients
4 cups cooked instant rice, chilled
1 package fried rice mix (like SunBird)
2 teaspoons reduced sodium soy sauce
1 cup thawed frozen peas and carrots
1/2 cup egg substitute
Nonstick cooking spray
Chopped green onions (optional)
Instructions
1. Cook rice according to package directions. Refrigerate until cold.
2. Lightly spray a large nonstick skillet with cooking spray.
3. Add cold rice, stirring frequently to prevent sticking, until heated through.
4. Add peas and carrots, egg substitute, and fried rice seasoning mix.
5. Follow seasoning packet directions (about 5 minutes more).
6. Garnish with green onions if desired. Serve immediately.
