A rustic French-style gratin featuring layers of root vegetables with a savory herb topping.
Ingredients
1 medium leek, halved and thinly sliced
2 tablespoons vegetable broth
3 garlic cloves, minced
1 lb turnips, peeled and sliced 1/8" thick
1/2 lb baking potatoes, sliced 1/8" thick
1/4 lb rutabaga, peeled and sliced 1/8" thick
1/2 lb celery root, peeled and sliced 1/8" thick
1 tablespoon fresh thyme (or 1/2 tsp dried)
1 cup vegetable broth
Freshly ground pepper
1/4 cup chopped parsley
1/4 cup fresh breadcrumbs
Instructions
1. Preheat oven to 400°F.
2. Cook leek and garlic in 2 tbsp broth until softened.
3. Layer vegetables in 2-quart baking dish, sprinkling leek mixture and thyme between layers.
4. Pour 1 cup broth over vegetables.
5. Season with pepper.
6. Cover with foil and bake 45 minutes.
7. Uncover, sprinkle with parsley and breadcrumbs.
8. Bake 20 more minutes until golden and vegetables are tender.
