Callaloo and Rice

A traditional Caribbean one-pot rice dish with callaloo greens (or spinach as a substitute).

Ingredients

2 cups unprocessed white rice 1/2 lb callaloo (or fresh spinach or Swiss chard) 1 small onion, sliced 1 clove garlic, chopped 1 lemon, sliced including peel 1 large tomato, quartered 4 1/2 cups water

Instructions

1. Combine all ingredients with 4 1/2 cups water in a large pot. 2. Bring to a boil. 3. Cover and simmer gently for 30-40 minutes. 4. Rice should be tender and have absorbed most of the liquid. 5. Fluff and serve. Note: If callaloo is unavailable, fresh spinach or Swiss chard makes an excellent substitute.
